Chef Jack Tsai – Uncle Tsai’s Condiments is the creation of Chef Jack, a passionate culinary expert with years of experience in blending traditional flavours with modern techniques. Having worked in renowned restaurants such as The Bridge Room and Quay, as well as Benu, Eleven Madison Park, The French Laundry, and Fera at Claridge’s, his expertise reflects professional culinary craftmanship. His experience in these celebrated establishments serves as the foundation for his passion project, Uncle Tsai’s Condiments, where he continues to share his love of exceptional food with the world.
Sommelier: Susei Ko
A leader in Victoria’s sommelier community, Susei Ko is dedicated to mentoring future wine professionals. She has built a distinguished career at top restaurants like Attica, Nobu, and Doot Doot Doot, earning multiple accolades, including three consecutive 3 Wine Glasses awards from Gourmet Traveller.
In 2023, she founded SK Hospitality, a consultancy specializing in wine and on-premise service. Respected for her expertise and industry connections, she lives by the motto Knowledge is power, continually expanding her knowledge in the evolving world of wine.
